We absolutely love this very simple and easy beef stew recipe. I use this Drew and Cole slow cooker which my lovely husband got me as a 35th birthday present 😉 and I highly recommend it!

Ingredients
- 1 onion, chopped
- 2 celery sticks, finely chopped
- 2 tbsp rapeseed oil
- 3 carrots, halved and cut into chunks
- 4 potatoes, cut into chunks
- 2 bay leaves
- ½ pack thyme
- 2 tbsp tomato purée
- 2 tbsp Worcestershire sauce
- 2 beef stock cubes or stock pots
- 900g beef for braising such as skirt, buy a whole piece and cut it yourself for bigger chunks or buy ready-diced
- 2 tsp plainflour
- greens and dumplings to serve
Method
- STEP 1 Fry the onion, carrots, potatoes and celery in 1 tbsp oil over a low heat until they start to soften – about 5 mins.
- STEP 2 Add the bay leaves, thyme, purée, flour and Worcestershire sauce. Stir until it doesn’t look dusty anymore.
- STEP 3 Tip in the beef and add 600ml boiling water, stir and then crumble over the stock cubes then season with salt and pepper.
- STEP 4 Cook on high for 8-10 hrs.
We like serving this delicious meal with some broccoli and dumplings.
